Dinner with chef Junior Borges

Long time friend of our founder April Scribner, Junior was raised in Mimoso do Sul, a small town north of Rio de Janeiro. Junior Borges worked for 13 years in New York City, where he graduated from the French Culinary Institute. He worked at A Voce and became executive chef at Amali. In Dallas, he was the opening executive chef at Uchi, earning a rare 5-star review from The Dallas Morning News. He later served as executive chef at FT33 and the Joule Hotel, playing a key role in the success of Mirador, Americano, and CBD Provisions.

Meridian, the first modern Brazilian fine-dining restaurant in the US, was named Restaurant of the Year in its debut year, and executive Chef Junior Borges was recognized as a “Game Changer” by Star Chefs and as a James Beard Award Semifinalist in 2023. Borges is an active member of the Culinary Council of Ment’or. Meridian was named one of the Top 5 restaurants under Borges’ direction by Robb Report’s The Best of The Best in 2022.
